Togul-saeujeot, which literally means cave salted shrimp, is aged and fermented in a talc bedrock cave. Gwangcheon cave salted shrimp is known for being an excellent natural health food, with a sweet flavor, firm flesh, and white and clear soup.
It draws a lot of attention because it is aged for about a year in a cave before it is sold I the market. In other words, a natural fermentation method is used to make the seasoning seep into the flesh. It is also concentrated with nutrients such as vitamins and minerals, and it sells like hot cakes during the kimjang (kimchi-making) season.
